Banana & Blueberry Loaf

Ingredients:
- 385g Banana
- 250g Fresh blueberries
- 250g Butter
- 35g Sugar
- 4 Eggs
- 250g Self-raising flour
Method:
- Line a loaf tin with grease proof baking paper
- Mash the bananas with a fork and put to one side
- In a large mixing bowl, cream together the sugar and butter, until the mix is fully combined and pale in colour
- Add the eggs one at a time
- Add the flour and mix until fully combined
- Fold in the banana and blueberries, pour the mix into the prepared loaf tin
- Bake in the oven at 190°C for approximately 20 minutes, by which time the loaf should be golden, rounded, and peeking out of the tin
- Remove from oven and allow it to cool slightly in their tin before removing to a wire rack
