Banana & Blueberry Loaf

Banana and blueberry loaf


  • 385g Banana
  • 250g Fresh blueberries
  • 250g Butter
  • 35g Sugar
  • 4 Eggs
  • 250g Self-raising flour


  1. Line a loaf tin with grease proof baking paper
  2. Mash the bananas with a fork and put to one side
  3. In a large mixing bowl, cream together the sugar and butter, until the mix is fully combined and pale in colour
  4. Add the eggs one at a time
  5. Add the flour and mix until fully combined
  6. Fold in the banana and blueberries, pour the mix into the prepared loaf tin
  7. Bake in the oven at 190°C for approximately 20 minutes, by which time the loaf should be golden, rounded, and peeking out of the tin
  8. Remove from oven and allow it to cool slightly in their tin before removing to a wire rack
