Chicken Tikka Fritters

Ingredients:
- 500g Cooked chicken breast
- 1 tbsp Tikka powder
- 1 tsp Garlic (pureed)
- 3 Eggs
- 1 tbsp Sour cream
- ½ tsp Black pepper
- 1 tbsp Plain flour
- 40g Spring onion (finely chopped)
- 1 tbsp Vegetable oil
- 1 tbsp Lemon juice

Method:
- Cut the chicken into very small pieces and place in a large mixing bowl with the tikka powder, garlic, and lemon juice.
- Mix until fully coated, cover and place in the fridge for 2 hours.
- Remove the chicken from the fridge and add the spring onion, eggs, sour cream, black pepper and flour to the bowl. Stir well to combine.
- Heat a frying pan on medium heat. Once heated, place drops of the fritter mix in the pan. Cook turning halfway for 2–3 minutes on each side. Place on a greaseproof lined plate while you repeat the process until all fritters are cooked.
