Minestrone Soup

Ingredients:
- 200g Carrots, finely diced
- 100g Onion, finely diced
- 100g Potatoes, finely diced
- 50g Celery, finely diced
- ÂĽ tsp Garlic puree
- Dried oregano
- 1 tsp Tomato purée
- 800g Chopped tomatoes
- 200g Cannellini beans
- 100g Spaghetti snapped into short lengths
- 50g Savoy cabbage, finely shredded
- 400ml Water
Method:
- Heat the oil in a pan, add the vegetables, garlic and potatoes, then cook over a high heat for 5 minutes until softened
- Stir in the tomato purée, water and tomatoes
- Bring to the boil, then turn down the heat and simmer for 10–15 minutes covered
- Add the beans and pasta, then cook for a further 10 minutes, adding the cabbage for the final 2 minutes.
