Minestrone soup


  • 200g Carrots, finely diced
  • 100g Onion, finely diced
  • 100g Potatoes, finely diced
  • 50g Celery, finely diced
  • ¼ tsp Garlic puree
  • Dried oregano
  • 1 tsp Tomato purée
  • 800g Chopped tomatoes
  • 200g Cannellini beans
  • 100g Spaghetti snapped into short lengths
  • 50g Savoy cabbage, finely shredded
  • 400ml Water


  1. Heat the oil in a pan, add the vegetables, garlic and potatoes, then cook over a high heat for 5 minutes until softened
  2. Stir in the tomato purée, water and tomatoes
  3. Bring to the boil, then turn down the heat and simmer for 10–15 minutes covered
  4. Add the beans and pasta, then cook for a further 10 minutes, adding the cabbage for the final 2 minutes.
