Pancakes

Ingredients:

  • 50g butter
  • 1 cap of vanilla essence
  • 300ml almond milk
  • 200g self-raising flour
  • 2 eggs
  • 1 tbsp baking powder
  • ¼ tsp salt

Method:

  1. Melt butter with vanilla essence until golden liquid and transfer to bowl
  2. Pour almond milk into mixture
  3. Add self-raising flour and 2 eggs to the bowl
  4. Add baking powder and a pinch of salt
  5. Mix well until batter is smooth in texture
  6. Heat pan with a splash of olive oil
  7. Pour pancakes to size and cook, flipping once bubbles appear on the surface of the pancake
  8. Serve hot with choice of toppings: fresh berries, banana, bacon, or syrup.
