Pancakes

Ingredients:
- 50g butter
- 1 cap of vanilla essence
- 300ml almond milk
- 200g self-raising flour
- 2 eggs
- 1 tbsp baking powder
- ÂĽ tsp salt
Method:
- Melt butter with vanilla essence until golden liquid and transfer to bowl
- Pour almond milk into mixture
- Add self-raising flour and 2 eggs to the bowl
- Add baking powder and a pinch of salt
- Mix well until batter is smooth in texture
- Heat pan with a splash of olive oil
- Pour pancakes to size and cook, flipping once bubbles appear on the surface of the pancake
- Serve hot with choice of toppings: fresh berries, banana, bacon, or syrup.
