Beef Sliders
Prep time (for 6 serves): 15 minutes. Cook time: 20-25 minutes.
This recipe provides: 2/3 serve protein (meat), 1 serve grains, 1 serve veggies, 1 serve dairy.
Ingredients:
- â…“ medium Zucchini
- ½ medium Carrot
- 24g Spinach, frozen
- â…“ cup Panko breadcrumbs
- ½ Egg (lightly whisked)
- 2 tsp Vegetable oil
- ÂĽ tsp Garlic powder
- ÂĽ tsp Onion powder
- 360g Beef mince, lean
- 6 Wholemeal dinner rolls or Slider buns
- 1 medium Tomato
- ½ Avocado (optional)
- 50g Tasty cheese
To serve (salad sides):
- 1 medium Carrot
- 1 Lebanese cucumber
- 150g Cherry tomatoes
Method:
Preheat the oven to 200°C (fan-forced) and line a baking tray with baking paper.
Allow the spinach to defrost, then squeeze out any excess liquid using your hands or paper towel. This helps keep the patties firm.Â
Wash the zucchini and carrot. Roughly chop them, then place into a food processor with the spinach. Pulse until the vegetables are finely chopped.
Add the breadcrumbs, half a whisked egg, oil, garlic powder and onion powder. Pulse briefly until everything is well combined.Â
Place the beef mince into a large bowl. Add the vegetable mixture and mix well using clean hands or a spoon until evenly combined.Â
Divide the mixture into 6 portions. Roll into balls, then gently flatten into small burger patties about the size of your palm.Â
Place patties onto the prepared tray. Bake for 20–25 minutes, turning halfway through, until browned and cooked through.Â
While the patties are cooking, slice the tomato, mash the avocado (if using), and slice the cheese. Cut the dinner rolls in half.
Wash the carrot, cucumber and cherry tomatoes for the side salad. Cut carrot and cucumber into sticks and slice the cherry tomatoes in half.
To assemble, spread a little avocado on the base of each roll. Add a tomato slice, a cooked patty and a slice of cheese, then top with the other half of the roll.
Serve one slider per person with fresh veggie sticks on the side.

For gluten-free, use gluten-free breadcrumbs and gluten-free burger buns. For dairy-free, omit cheese when serving or serve slices of Made with Plants™ Cheese. For egg-free use chia seeds or egg-replacer.
